Coconut Chili Shrimp Taco Recipe
|

Summertime is officially here, and we are sharing a simple yet elevated taco recipe that’s perfect for backyard dinners with the family!
|
|
|
|
|
|
|
|
|
1/3 CUP UNSWEETENED SHREDDED COCONUT 1 TABLESPOON CHILI POWDER 2 TEASPOONS KOSHER SALT, DIVIDED 1 LIME, ZESTED 1 POUND JUMBO GULF SHRIMP, PEELED AND DEVEINED 2 TABLESPOONS CHIPOTLES IN ADOBO 2 GARLIC CLOVES 2/3 CUP SOUR CREAM ½ CUP COCONUT MILK ½ GREEN CABBAGE 1 AVOCADO 6 OUNCES QUESO FRESCO PICKLED RED ONIONS*, CILANTRO, AND LIME WEDGES, FOR SERVING 10-12 CORN TORTILLAS 1 TABLESPOON EXTRA-VIRGIN OLIVE OIL

1. Make the coconut chili rub for the shrimp by blending shredded coconut, chili powder, 1 ½ tsp kosher salt, and half of the lime zest in a food processor until finely chopped. Toss the shrimp with this rub and set aside.
|
|
|
|
2. For the coconut chipotle sauce, finely chop chipotles in adobo and grate garlic cloves. Combine in a bowl with sour cream, coconut milk, remaining ½ tsp salt, and remaining lime zest. Whisk together and set aside.
|
|
|
|
3. Prepare toppings: Shred cabbage, slice avocado, and crumble cotija cheese. Arrange pickled onions, cilantro, and lime wedges.
|
|
|
|
4. Heat tortillas in a cast-iron skillet until charred and warm, then set aside wrapped in a towel. Cook shrimp in olive oil over medium heat for about 3 minutes until opaque and slightly curled. Remove from pan.
|
|
|
|
5. Assemble tacos with shrimp, cabbage, avocado, queso fresco, pickled onions, cilantro, and chipotle coconut sauce on each tortilla. Serve immediately.
|
|
|
|
*For homemade pickled red onions, thinly slice ½ red onion. Simmer ¼ cup each of apple cider vinegar and water, 1 tbsp granulated sugar, ½ tbsp salt, until dissolved. Pour over onions and let sit for 20 minutes before using.
